I made these a few months ago when my mom gave me some fresh rhubarb from the garden. I had to figure out what to make with a bunch of rhubarb. I was going to go with the traditional rhubarb crisp, but I decided to do muffins instead! <span style="background-color: white;">The Greek yogurt in this recipe makes the muffins turn out really moist. I like to think it makes them a little healthier, too. :)</span></div>

2 cups flour</div>

3/4 cup sugar</div>

1 teaspoon baking soda</div>

1/4 teaspoon salt</div>

1 cup plain Greek yogurt</div>

4 ounces unsalted butter, melted</div>

2 eggs</div>

1 teaspoon vanilla extract</div>

To Bake:</div>

Preheat oven to 400 degrees. Spray muffin tin with olive oil spray. Fill muffin tins about 3/4 of the way full with batter and sprinkle on some struesel topping. Bake for 18-22 minutes or until a toothpick inserted into the center of the muffin comes out clean.</div>

All you really need is a glass container, shells or some rocks for the bottom, some potting soil, and plants! I chose succulents because they are just so cute!</div>

I found some rocks at the dollar store that I thought I was going to use for the top, but I think I like it the way it is now. Maybe later I'll add some rocks. Total cost for this project was under $20. I think I paid $10 for the container (my memory escapes me). The shells I got at a thrift shop for 50 cents, potting soil at the dollar store for... $1 :) and succulents were $2.50 each at Steins Garden and Gifts. </div>

This project was also completed for under $20. The small planters were $1 each at Target. I got the plants at a local floral shop a couple blocks from my apartment for $4.95 each. I originally bought these plants to be put in the terrarium without first looking at how big the container was... oops!

Veggies: Chop zucchini into 2 inch pieces, and chop broccoli into small pieces. Heat a skillet (one that has a lid) over medium head. Add olive oil to pan. Add zucchini and broccoli with 1/4 cup of water. Sprinkle on some <span style="background-color: white;">Penzeys Ruth Ann's Muskego Ave Chicken and Fish Seasoning. Cover with lid and let steam until the water has evaporated. Once water is gone, keep cooking over low heat for about 3 more minutes.</span></div>

Salmon: Thaw 2 fillets of salmon, rinse and pat dry. Heat a skillet over medium heat and spray with olive oil (or brush both sides with olive oil). It's been quite awhile since I've written a post and I apologize. I've been real busy doing lots of random things. May was quite a month...busy every weekend and so far June has been the same. This recipe for spicy baked tofu tacos caught my eye on Pinterest (a borderline obsession of mine). I had half of a package of tofu and needed to find a yummy recipe to make. I found one! It comes from a blog called <a href="http://peasandthankyou.com/2011/04/05/tofu-love/" target="_blank">Peas and Thank You</a>. So cute! Here's my take on her recipe.</div>

2 Tablespoons Soy Sauce</div>

Combine all of the ingredients for the marinade in a container that has a lid. Slice the tofu into thin slabs (about 1/4 inch thick) and add to the marinade container. Gently shake the container until the tofu is covered with marinade. Tip: Don't go nuts...tofu is delicate! :) Refrigerate for about 2 hours.</div>

To bake the tofu: Preheat your oven to 350. Spray a baking sheet with olive oil and spread out the tofu slabs so they are about an inch apart. Drizzle the remaining marinade over the top of the slices.</div>

Bake the tofu for about 10 minutes. Remove pan from oven, flip the slices, and bake again for about 10-15 minutes, or until the slices get crispy on the edges.</div>

To make tacos: Spread guacamole on your tortilla, and add tofu slices. Top with chopped green cabbage, and salsa. I used fruit salsa... yummy! Makes about 4 tacos.</div>

I took the netting off of the herbs and planted them into the planters. It was easier to work with them when the netting was off and I was able to move them around easier so they fit into the containers.</div>

In order to get the biggest bang for their buck, they ordered the spices in bags. I tried to find a bunch of cool, random jars while thrift shopping, but I didn't have much luck. Finally, I ended up getting jars from Penzey's. And so began my weekend craft project. </div>

Each jar comes with a label that you can write on, but I wanted to save the label that came on the bag. They give information about the spice and also include recipes and tips on how to use the them. In order to keep it uniform with the other spices that I already had in jars, I decided to get creative and find a way to put the label from the bag onto the jars. This was done using double sided tape, contact paper, and a lot of patience.</div>

Start by cooking the brown rice. Brown rice takes quite a while to cook because it is a whole grain. Find a pot that has a tight fitting lid, and boil 2 1/2 cups of water. Add 1 cup of brown rice, stir it, and cover the pot. Return the pot to a boil, then turn the heat down to a simmer. Simmer the rice for 45-50 minutes or until it's cooked through. </div>

Cook enough kimchi for as many people as you plan to feed. A good guesstimate is about a cup per person. Start by putting chopped kimchi and it's juice in a pot that has a lid. Add Korean red pepper flakes and paste. Start with a little and add more because it has quite a kick. Korean spiciness is different than Mexican or Indian spiciness as it is a little more mild. Add sugar and green onion (optional).</div>

Pour water over the ingredients until they are just covered. Close the lid of the pot and boil for about 25 to 30 minutes over medium heat. Add tofu and boil for 5 more minutes. Mmm, tofu! :)</div>

Last Saturday night was Girls Night In. I love getting together with friends who are willing to be adventurous in the kitchen! Katie, Bridget and I got together and decided to make Mac n Cheese stuffed Chile Rellenos. Katie suggested it after seeing the original blog post on <a href="http://www.thefoodinmybeard.com/2011/06/mac-and-cheese-stuffed-chile-relleno.html%C2%A0" target="_blank">The Food In My Beard</a>. We were all very excited to try something new! It was quite a process, but so worth it in the end! <span style="text-align: center;">We decided to personalize (and simplify) and stuff the peppers with "bugs" mac n cheese. </span>And yes, we're all in our 20's ha ha. :)</div>

Now to roast the peppers! Preheat your oven to 450 degrees. Spray or coat the poblanos with olive oil and roast them for about 20-30 minutes, or until the skin starts to blacken. The peppers are easier to peel if the skin gets a little black. You can also use a broiler (unfortunately, my broiler is out of commission).</div>

Once the peppers are roasted, peeled, and stuffed with mac n cheese and/or Mexican rice, you can start the breading process. Coat the pepper in flour first, then egg. Repeat this process 3 times. The last step will be to dip the pepper in panko breadcrumbs. </div>

I sprayed the grill with some olive oil spray and lined up the onions in a row. I closed the grill and let them sizzle away for about 10 minutes. No need to flip them because there is a top and bottom grill on a George Foreman. And there you go, in about 10 minutes you have yummy grilled veggies!</div>

My dad came to visit me this weekend. I can honestly say that I can't remember the last time I spent that much one-on-one time with him and it was fantastic. We had a wonderful time exploring restaurants around Oshkosh that I haven't been to yet. Mexican food = our favorite! :) We did some quick thrift shopping and checked out a retro furniture shop downtown. Saturday we attempted to stay awake for a movie, but after a long day we both ended up passed out on the futon. Quite the pair! </div>

I've acquired a few new cookbooks over the past few weeks that I'm pretty excited about. I love old cookbooks. I like to try to imagine the people who used them before they were passed down or given away. I look at thrift shops to see if there is anything that catches my eye. Wisconsin had quite a mild winter compared to years past...but to a girl who loves heat, it still was cold! Now that the weather is nice, I've started running again. I say again because it seems I fall into these strange summer running patterns that don't continue through the winter. </span> </div>

Maybe at one point I'll be a year-round runner, but for now I'm just happy that I've started again. Spring </h4>

Spring is really fun to watch. All of the flowers start to bloom, you can hear all the little birds chirping in the trees again, and everything gets green. I love green. I'm excited to say that my herbs are growing up! They're two weeks old today. Another fun thing: I talked with my neighbor Jim and he's going to save a little space for me in the backyard garden. Yay! I'm also looking forward to the day I can take the pesky plastic off my windows... soon! </div>

Well friends, I was going to wait a little longer to post this, but I'm just too excited! A few weekends ago I visited Nichole and we bought seeds to plant windowsill herb gardens. The seeds went into the pellets a week ago today and a few days ago they started sprouting! </div>

I got super excited when I saw green in the midst of the brown peat pellets. There are three types of herbs planted. Cilantro (definitely my most favorite herb ever - I think we planted 4 of those), Oregano, and Basil. The Oregano seeds are so tiny! I can't wait until I have enough Basil to make pesto. Mmm!</div>

They're planted in a Jiffy Windowsill Greenhouse. You can get one <a href="http://www.amazon.com/Jiffy-5719-10-Cell-Windowsill-Greenhouse/dp/B004KH0OXW" target="_blank">here</a> or buy one for a lot cheaper at your local garden shop. I got mine for $3.99. The pellets come compressed and you add water in order to make them expand. They're covered with a thin, mesh netting and they "grow" when they get wet. How fun!</div>

The fun thing about roasted veggies is you can pretty much use whatever you have on hand and they turn out amazing. It's quite a simple process and roasting with herbs really brings out the individual flavors of each vegetable. I used about 1/2 a head of broccoli, 1 sweet potato, 1/2 a red onion, and 1 yellow squash.</div>

Add about 1-2 teaspoons of rosemary, thyme, parsley, marjoram, and I also threw in some "Arizona Dreaming" from <a href="http://www.penzeys.com/" target="_blank">Penzey's</a> to add an extra little South of the Border flavor, but you can use any type of seasoning you have on hand. Arizona Dreaming is a mix of ancho chili pepper, black pepper, onion, garlic, paprika, cumin, oregano, cilantro, lemon peel, chipotle pepper, red pepper, jalapeno, cocoa, and natural smoke flavor. I decided last minute that I wanted to make a roasted veggie sandwich so I cut up some slices of Monterrey Jack cheese to put on toast. I put it on a piece of (pre-toasted) whole wheat toast and put it on the baking pan to cook for the last 5 minutes so the cheese melted.</div>

This Mexican tortilla lasagna is definitely a lot of my favorites combined into one big blob of yumminess. Nichole and I made this one weekend when she came to visit. We're both Mexican food lovers. Spring rolls are so fun and so easy to make! They are healthy and light, yet surprisingly filling. The thing you have to watch out for is getting too excited and accidentally overfilling the rice paper wrappers. It's hard not to do this when you have so much good stuff to put in them! It does take some practice to roll them, so don't feel bad if you don't get it right the first (or second, or third..) time. You can find spring roll wrappers in the Asian section of most grocery stores.<br />

I always thought that you were supposed to use warm water to wet the rice paper wrappers when making spring rolls, but I learned recently that this is not true. The rice paper is less likely to tear if you use cold water! You'll have to have a shallow dish filled with water (a pie pan works well). Start by just getting the edges of the rice paper wet and then place the whole wrapper into the water until it is completely covered. Let it sit in the water for just a few seconds. Carefully take it out of the water and place it on a plate.<br />

It turned out yummy! Find the recipe I used <a href="http://www.lovintheoven.com/search/label/apple" target="_blank">here</a>! Instead of throwing out the apple cores and peels from the 5 apples I used, I decided to try to make apple jelly. If you boil apple cores and peels, there is enough natural pectin in the fruit. No need to buy pectin at the store!</div>

First, I threw all the apple cores and peels in a pot and added enough water to just cover them. I brought this mixture to a boil over medium heat. I added about 1/2 teaspoon of cinnamon and 1/4 teaspoon of cloves to the water. Once it was boiling, I reduced the heat and simmered it for 30 minutes (until the apples got soft). My whole apartment smelled like apple cider for hours afterwards. Mmmm! </div>

Once the apple pieces were soft, I placed a strainer over a bowl and allowed it to strain for about 5 minutes. Then I put the pieces in a plastic bag and poked it with a fork to get the rest of the juices out. You've got to get a little creative in the kitchen! I don't feel like it is necessary to buy all the fancy equipment like a jelly bag or cheese cloth when a plastic bag poked with a fork works just fine ha ha!</div>

After the straining process was complete, I ended up with about 1 1/4 cup of liquid. I added 3/4 cup of granulated sugar to the mix and let it boil. This is where the fun begins. You have to stir the mixture constantly while it's boiling, otherwise it will burn or bubble over. It takes a while for the mixture to thicken to the right consistency for jelly. </div>

A few of the recipes I found online suggested using the 'spoon test' to test the consistency. This was pretty vague and said that when the liquid 'hangs' on the spoon it has reached the right consistency. A few others mentioned the 'plate test'. This suggests putting a small amount of the liquid on a plate and placing it in the freezer. If you poke at it and the shape of your finger stays set in the liquid, then it's at the right consistency.</div>

Add 1/2 cup vegetable stock, 1/2 cup half and half, and season with salt and pepper. <span style="text-align: center;">Simmer over medium heat for about 5 minutes. </span>Meanwhile, cook up 1 1/2 cups of whole wheat penne noodles. Follow directions on the package to cook them. Mine boiled for about 10 minutes before they were 'al dente.' I still don't even know what that means... ha ha! I just keep boiling and checking the noodles every minute or two after they've boiled awhile. You could always try the "throw the noodle against the wall/on the ceiling trick", but I'm pretty sure that is only supposed to work for spaghetti noodles. I remember I used to have a ball with that trick when I was a kid ... I'll let you in on a little secret: I still use it today and smile each time I do. :)</div>

I started to really love banana pancakes after traveling to Ecuador on a service trip with my University. We stayed at a biomarine station in the middle of the rainforest and the cooks there were amazing! Every morning there was fresh fruit juice and many of the mornings we had banana pancakes. So, in honor of Ecuador, my first Brenana Bread blogpost will be about banana pancakes!</div>

I made them for a late breakfast yesterday and decided to add in oats. I think that was a good decision. :)</span><br />

Combine all ingredients and add chunks of banana. I use a spoon to make the chunks and then use a fork to mash them into the mixture. It's okay if it's a little lumpy.</div>

The chunks of banana get ooey gooey and cook up perfectly. Every once in awhile you get a chewy bite where you can really taste the oats. Top with some butter and raw sugar and enjoy! The banana makes the pancake sweet enough that you don't need to use maple syrup... unless you want to indulge. :) This recipe makes 3 medium sized pancakes. Keep that in mind if you're feeding a crowd! </div>
